Every now and then, when making a weekly menu, things come up. Either I'll forget an ingredient and won't have it for when it's time to actually make the meal, or we'll decide we want to switch the days around, or we'll skip a meal because we're in the mood for something completely different that wasn't planned, or we've got so many leftovers that we don't need to make another meals so much as clean the refrigerator of the leftovers. It happens, and we don't freak out. I mean, until a few months ago, every night was unplanned and last minute. But, since we've set a pretty strict food budget for ourselves, I try to work those skipped meals into the next week's planning since I usually either have all or at least most of the ingredients already available. And it wouldn't be very frugal of me to waste ingredients, now would it?
So, this week we have three days where we're eating meals that we'd skipped either last week or the week before.
Monday--Chicken with Spinach and Mushrooms
Tuesday--Teriyaki Salmon Strips
Wednesday--Cheddar Chicken with Warm Black Bean Salsa
Thursday--Chicken and Barley Soup
Sandwiches or Salad
Vegetable of some sort
